Order a karak anywhere in the UAE and you'll get a small glass of something strong, sweet, spiced and milky — the unofficial fuel of Dubai's cafeterias, building sites, majlis tables and late-night drives. But what exactly is karak chai, and why is it everywhere?

What is karak chai?

Karak (from the Hindi/Urdu word for ‘strong’) is a robust milk tea: black tea brewed hard, sweetened generously, and enriched with evaporated or condensed milk until it's thick and amber. It's served piping hot in small glasses. Its roots are South Asian — the chai of the subcontinent — carried to the Gulf by the workers and traders who built modern Dubai, where it became a daily ritual across every community.

What's in it?

At its core: strong black tea, milk (often evaporated/condensed) and sugar. The aromatics are where it sings — cardamom above all, plus warming notes of ginger, cinnamon, saffron or cloves depending on the maker. The tea is boiled and pulled so the flavour is bold and the texture creamy. No two cafeterias make it quite the same, which is half the fun.

Karak vs ‘chai’

All karak is chai, but not all chai is karak. ‘Chai’ just means tea; masala chai is the spiced Indian milk tea. Karak is the Gulf's stronger, sweeter, thicker cousin — built for a quick, intense hit rather than a slow sip.
