Why specialty coffee costs what it does
Specialty coffee costs more than commodity coffee for general reasons that apply to any café. Specialty-grade beans are usually traceable lots rather than blends bought on volume, and they are best roasted in small batches and used while fresh. A barista has to dial in the grinder as beans and weather change, and each drink takes time to pour properly. Milk, cups, rent and staff are part of the price too.
Our specialty coffee guide explains the terms, and the full menu (PDF) lists every price.
